About our fresh ginseng

What arrives, how to use it, and how to keep it fresh.

Fresh ginseng root, dug this season on our family farm in Edgar, Wisconsin. This is fresh American ginseng, sold by net weight from September to mid-January in 8 oz, 16 oz, 5 lb and 10 lb sizes. It is perishable: it ships in an insulated box with cold packs and 1-day delivery, and goes in the refrigerator when it arrives.

Buying fresh American ginseng root this season

Our fresh roots are dug each fall on our family farm in Edgar, Wisconsin, where we have been farming since 1953, and sold only from September through mid-January. If you missed fresh root last year, or want to stock up before the season closes, this is the window to order.

  • 8 oz and 16 oz: the easiest sizes to start with when you want to slice fresh root into soup or tea.
  • 5 lb and 10 lb: packed as five or ten 1 lb bags, with the lowest price per pound on fresh root. Keep one bag in the refrigerator and freeze or dry the rest to use after the season ends.

Compare fresh with fresh: about three pounds of fresh root dry down to one pound of dried root, so a fresh price per pound is not the same as a dried one. In many Chinese households, fresh root is traditionally sliced into simmered soups through fall and winter. See the live price per pound for every root and bag size, shop dried whole root by age for year-round buying, or see bulk 5 lb and 10 lb orders.

What you receive

Choose 8 oz, 16 oz, 5 lb, or 10 lb. The size selected at checkout is the total fresh-root weight that ships. Individual roots naturally vary in size, shape, crown, branching, and surface appearance.

Fresh versus dried root

Fresh root contains more natural moisture and has a firm, crisp texture. Dried root is shelf stable and better suited to long-term pantry storage.

How to use it

Wash thoroughly under cool running water before use. Slice thinly and steep in hot water, or add slices to soup, broth, stew, or congee. Start with a small amount and adjust to taste.

Storage

Refrigerate as soon as it arrives and don't wash the roots until you're ready to use them. Wrapped loosely in a paper towel in a closed bag in the crisper drawer (34–39°F), fresh roots keep 2 to 3 weeks. If the towel gets wet, replace it. To keep them longer, freeze whole roots in a sealed freezer bag for up to about 6 months, or slice and dry them.

Seasonal availability

Fresh roots are available from September through mid-January. Every fresh-root order ships with 1-day delivery.

Natural variation

Shape, branching, surface texture, and the number of roots in a package vary naturally. The 8 oz package is shown in the gallery; every size is sold by the net weight selected at checkout.

Safety

Ask a qualified healthcare professional before use if you are pregnant, nursing, taking medication, or managing a health condition.

So excellent! I’m an actual customer! It just arrived and I have a piece of the ginseng in my mouth! I’m an experienced ginseng user for about 40 years and used to getting good quality ginseng! This is great and I recommend!
